   DINNER
Irish Stout Beef Stew

A slow cooker and a few hours will make this robust
stew ready to eat with little hassle – plus it features all your favorite Irish flavors and textures. It’s the ideal meal to have ready when you return from the slopes or from a day of exploring Michigan during cooler temperatures. A pint of Guinness, anyone?
Ingredients
• 2 cups thickly sliced carrots
• 3 cups cubed potatoes
• 1 bay leaf
• 1 teaspoon salt
• 1 teaspoon pepper
• 3 Tablespoon olive oil, divided
• 2 pounds beef stew meat or chuck, cubed
• 1 large yellow onion
• 3 cloves garlic, minced
• 1 bottle stout beer, such as Guinness
• 3 cups beef stock
• 3 Tablespoons tomato paste
• 1 Tablespoon Worchestershire sauce
• 2 springs fresh thyme or 1/2 teaspoon dried thyme
Directions
1. Place carrots, potatoes, and bay leaf in bottom of slow cooker. Pat beef cubes dry with a paper towel and toss in flour mixture. Heat olive oil in a large sauté pan. Brown cubed meat on all sides, cooking in batches so the pan is not crowded. Add browned beef to crock pot.
2. Add remaining 1 Tbsp. oil to the sauté pan along with
the onions and garlic. Cook until onions are soft, about 5 minutes. Add half bottle of stout and scrape bottom of pan to get all flavorful bits. Add onion mixture to crock pot with remaining beer, beef stock, tomato paste, Worchestershire sauce and thyme.
3. Stir, cover, and cook for 8 hours on low or 4-5 hours on high, until meat and vegetables are tender. Alternatively, can cook this in a Dutch oven. Adjust salt and pepper and serve.

Apple-Cinnamon Pudgy Pie

The sweet combination of apples and cinnamon kick it up
a notch with this easy-to-make pudgy pie. What exactly is a pudgy pie? It’s a sandwich cooked in a pie iron. With just a few simple ingredients and a little time over a nice, warm fire, you have yourself a delectable pastry to enjoy.
Ingredients
• 1 Tablespoon butter, softened
• 2 slices white bread
• 1 small tart apple, thinly sliced
• 2 to 3 teaspoons cinnamon sugar
Instructions
1. Spread butter over bread slices; place one slice in a greased sandwich iron, buttered side down. Top with sliced apples, cinnamon sugar, and remaining slice, buttered side up.
Close iron.
2. Cook over a hot campfire until golden brown, turning occasionally, 5-7 minutes.
